Grapes for the Domaine Font-Mars Picpoul de Pinet are all picked by hand at night when it is much cooler, de-stemmed and fermented at a low temperature for 20 days. The wine is then kept in stainless steel tanks and bottled in January after the harvest. The wine comes in the traditional tall green bottle yet it is a big step up in quality from the rather neutral Picpoul that comes from the larger co- operatives in the area. White peach and pineapple aromas lead onto the palate which is lively and fresh with plenty of flavour and real character. A perfect apﾨﾦritif and a great match with all seafood.
