After much deliberation Domaine du Pe?lican decided to produce a 100% Pinot Noir cuve?e for the first time from the 2018 vintage. The team had resisted until then because they were concerned that they would perhaps not master the vinification of Pinot Noir outside of Burgundy. In 2019, the cuvᄄᆭe was made exclusively from their Clos Saint-Laurent parcel, chosen for its altitude (340-380m), ideal for the fresh style they wanted to achieve. So, it became ᄀᄚsingle vineyardᄀᄆ. The soil is made of fallen rocks ("e?boulis calcaires") of Bajocian limestone over grey marls (Lias) and the vines are between 10 and 45 years old. Aged in a combination of Burgundy barrels (60%) and in vats (40%) no new oak is used.?Earthy and medium-bodied, the wine shows flavours of red fruit, cranberries and toasted bread, with mineral-laden undertones and refreshing herbal notes shining through on the finish.
